Low Fat TVP "Meatball" Recipe

TVP Meatballs

Mix and let stand for 10 minutes:

2 cups TVP granules
1 3/4 cup boiling water

Saute in skillet until golden:

2 Tbsp. olive oil (or cooking spray)
1/2 cup onion, chopped small
garlic, minced small, as desired

Add the TVP and stir in:

1/2 tsp. chili powder
1/2 tsp. garlic powder (if desired)
1/2 tsp. oregano
1 tsp salt
1 Tbsp. tamari

Mix in:

1/2 cup flour

Mix well and shape into small balls, pressing firmly. When they are made, brown in a little bit of oil or spray in a skillet, rolling over carefully to brown evenly. Then transfer to the oven (or a toaster oven) and bake at about 350 for around 12-20 minutes (the longer, the more crunchy the exterior) or until cooked throughout.

Some recipes will say that you can either brown them in the skillet OR bake them. I have found that both methods, used consecutively, will yield superior results.

Serve with pasta and sauce, or in a crusty roll with spaghetti sauce for "Meatball Sandwiches". I make this recipe early in the week and then keep the balls in the fridge for up to 5 days or so, eating them as needed and incorporating them into meals as I go.


I love meatballs, but have never made them myself. This sounds delicious!
